THE HARVESTING OF THE OLIVE
The field is the origin. The olive trees that will provide the best fruit in each campaign are selected, depending on the weather and the terrain. The precise time of harvesting is chosen, with the right temperature, ensuring that the fruit does not suffer from any erosion and is taken to the oil mill within hours, in the best conditions, for milling on the spot, thus conserving all its properties intact.

Only natural organic fertilisers are used, such as by-products from the olive grove (pruning residues, pomace or alperujo compost), some manure from non-intensive farming and other fertilisers allowed certified organic under very strict regulations.
